This Utah original gets its name from Promontory Summit, the historic location where the Union Pacific and the Central Pacific Railroad lines linked 150 years ago.

The recipe for Promontory is from Utah State University, where it’s known as Old Juniper. USU allowed us to commercialize this cheddar recipe on an artisan scale. Pat and Tim took USUs four-day cheesemaking course, which at the time was geared toward commodity cheesemaking education. As Beehive progressed toward its goals, Utah State became increasingly aware of the artisan cheese movement. Soon, the university began transitioning from commodity-focused classes to small-scale artisanal educational programming.

Read about Beehive in Wine Spectator and decided to give it a try. I'm a fan of Beecher's cheese and Cougar Gold, and Promontory has them beat hands-down! The flavor is distinct but not sharp, and the creamy texture feels great in your mouth. I immediately ordered four more wedges. Try it, you won't be disappointed.
