Arugula salad wrapped in deli ham



  • 2/3 cups olive oil
  • 1/3 cup fresh lemon juice
  • 1 finely minced garlic clove
  • 1 teaspoon mayo
  • Salt and pepper to taste


  • 2-3 cups arugula
  • 2-3 ounces of shredded Promontory or Seahive
  • 4 “sandwich” slices of a good quality smoked deli ham or prosciutto
  • Toothpicks to close the wraps 


  1. Combine the dressing ingredients and either whisk or blend them with an immersion blender.
  2. Dress the arugula in a mixing bowl. Add as little or as much dressing as you like! Sprinkle the shredded cheese over the dressed greens and toss again to evenly distribute the shredded cheese.
  3. Lay out the ham (or prosciutto) and evenly distribute the arugula mixture between the ham slices. Begin rolling the ham until you have a ham and arugula wrap. Place a toothpick in your roll to hold it closed.
