This cheese is an expression of love for the landscape of the American Southwest; the rind is almost as stunning as a Canyonlands vista. Beautifully layered like Entrada Sandstone, the paste of Red Butte is tumbled with Hatch Chiles and complex flavors.

What does it taste like?

Creamy and smoky with a proper balance of heat. The coriander in the rub on the rind gives Red Butte a mellow lemony undertone. The New Mexico Hatch Chiles in the paste provide depth and smokiness.

    Avery is great at handling all of my orders and making sure that i'm satisfied with everything.

    Cheeses are amazing i specifically like the red hatch, its the perfect combo between pepper jack and a white cheddar with a small kick.


    This is one of the best tasting cheeses that I have ever had the pleasure of eating. Thank you, Beehive.

    Great cheese with outstanding flavor

    Surprised that this cheese would be so tasty. It was consumed 1st and then we ate the other cheeses. Bought it as kind of an experiment along with some of the regular cheddar cheeses we had previously purchased. Based on our experience with the flavor and taste of the regular cedar cheeses decided to purchase the regular cheddar cheese again and added the Red Butte to the list.

    Doesn't get better than this!

    I discovered Beehive Cheese when, at a fine restaurant, the server brought out an appetizer of Red Butte Hatch Chile with a bit of dried fig, honey and micro greens on top. It was so amazing I had to ask where I could get the cheese and was first told about Beehive Cheese Company. I've just ordered my third wedge and plan to be a repeat buyer for many years to come!
