This cheese is an expression of love for the landscape of the American Southwest; the rind is almost as stunning as a Canyonlands vista. Beautifully layered like Entrada Sandstone, the paste of Red Butte is tumbled with Hatch Chiles and complex flavors.
Vegetarian rennet, cow's milk, all ingredients rubbed on the rind are organic, this is a gluten-friendly product.
Red Butte began as a collaboration with Harmons Neighborhood Grocer during Hatch Chile season. The cheese was such a success that Harmons suggested it should be available to everyone. Today, it is our second-best-selling cheese.
Named after Red Butte Garden, a botanical garden at the University of Utah in Salt Lake City, this cheese reflects our deep Utah roots. Beehive Cheese has long supported Red Butte Garden, making the name a natural choice to honor our connection to the community.
The cheese monger at our local grocery store recommended I give the Hatch Chile cheese a try and I have become obsessed.

When I had this cheese for the first time at a winery, I loved it so much, I asked the winery for the maker's name and ordered some for myself. Even my partner who is not a cheese lover, loved this cheese with the hatch smokiness and spice. I am excited to try all the other varieties Beehive Cheese offers.
We have only tried one so far. The Gouda which is excellent however the order was about two weeks ago and the use by date is 10/15/24 on both packages. Very disappointed as this is my first order after having your cheese in Utah on vacation.
Thank you for the feedback and glad to hear you enjoyed Red Butte Hatch! As long as there are no obvious signs of expiration, our cheese actually gets better and better over time, even if it's past the posted best by date. It should last up to year in the fridge in it's originial packaging. We'd love to send more cheese with a longer shelf date. We'll email you directly about that.
I absolutely love the espresso cheese and hadn’t tried this one yet as it was new in my local Brookshires! It was amazing, not really spicy but the chile gave it such a nice flavor! I ate it with jalapeños and strawberries, so delightful!
