Storage

  • Store between 33-40 degrees. Avoid fluctuations outside this range, which can cause the cheese to gas off (a.k.a. blowing).
  • To avoid cross contamination, avoid storing near bloomy rind cheeses.
  • If the quarter has blown in its original packaging and no mold is present, you can leave it in the packaging if it's out of public view. It's perfectly fine to consume. Cheese is a living being that likes to breathe a little.
  • Feel free to rewrap or reseal the blown quarter. If that doesn't do it, email hello@beehivecheese.com and we'll fix it.
  • If the 4-oz retail wedges have blown, contact hello@beehivecheese.com and we'll fix it.

How to cut & wrap Teahive

  • There should be rind present on every retail cut. Check out the video above for a visual.  
  • Tight plastic wrap is the best for Teahive to mitigate mold. Cheese paper, while sexy, reduces shelf life after cutting.

What if there's mold present?

  • For quarter wheels, if the cheese is within date and has a few spots of white, blue, or green mold, brush off the spots and cover up bald spot with surrounding rub. Seek a credit if the mold is so pervasive that it cannot be brushed off. For 4-oz wedges in the original packaging, contact your distributor to seek a credit.
  • If you see orange, red, or black mold, discard this cheese and contact your distributor. 

A cheese inspired by citrus groves and a love of tea

The idea for Teahive was born on a winding road through Portugal. While on vacation, Pat and Jeanette found themselves surrounded by fragrant citrus groves, their sweet, zesty aroma filling the air. The experience stuck with them—what if they could capture that bright, citrusy essence in a cheese?  

When they returned home, Pat shared the idea with Tim, Beehive Cheese’s resident foodie. Immediately, Tim thought of bergamot, a unique citrus that tastes like a cross between a lemon and a lime. Most people know bergamot as the signature flavor in Earl Grey tea—a tea that Tim, a true tea lover, had always adored.  

Inspired, they blended fragrant Earl Grey tea into a rub and tested it on their signature cheese. The result was magical—the smooth, creamy cheddar absorbed the floral and citrus notes, creating a cheese that was delicate, aromatic, and utterly unique.  

And just like that, Teahive was born—a cheese with roots in a Portuguese citrus grove and the warmth of a well-brewed cup of tea.

Pairings

Pinot Grigio, characterized by its very high acidity, citrus notes, and floral aromas, offers a perfect balance to the fruity notes present in the rind of the cheese. The wine's acidity cuts through the richness of the cheese, while its citrus flavors harmonize with the fruitiness in Teahive’s paste. Additionally, the Bergamot flavors in the cheese are brought forward by the wine, resulting in a refreshing and flavorful pairing experience.

Pinot Noir, known for its light to medium body and fruit-forward character, achieves a perfect balance with the fruity notes in the wine. The wine's delicate body and emphasis on fruit flavors create a harmonious combination with the inherent fruitiness found in the wine itself. Together, they create a well-balanced and enjoyable pairing that highlights the best of both the wine and its fruity characteristics.
