Seahive Veggie Flatbread!

Ingredients

  • Your favorite pizza dough recipe or prepared store bought
  • 4 ounces of Seahive Cheese (shredded)
  • 1 small zucchini thinly sliced
  • 1 small yellow summer squash thinly sliced
  • 1 cup of chopped asparagus (tops only)
  • 2 tablespoons sliced shallot
  • 2 teaspoons chopped garlic
  • 1 teaspoon olive oil
  • 2 tablespoons fresh basil
  • 1 lemon

Directions

  1. Set oven to broil.
  2. In a small sauté pan add oil, shallots and garlic. Sauté on low heat until translucent. Remove from heat and set aside.
  3. Roll out pizza until about 1/4 inch thick. Add oil to sauté pan and place flattened dough in hot pan. Lightly brown on both sides and remove from heat and place on cookie sheet.
  4. Spread cheese on dough and add zucchini, yellow squash, asparagus, shallots and garlic.
  5. Broil until Cheese is melted and crust is browned and crisp. Remove from oven and sprinkle fresh basil on top and squeeze fresh lemon over top.
  6. Pair with a Bees Knees Martini for a refreshing combination!
