In honor of National Grilled Cheese Day on April 12th, Chef Heather put together a delicious Croque Madame sandwich with Seahive. Hand rubbed with local sea salt and honey, Seahive is both buttery and sweet - making it an excellent choice to celebrate this holiday.
Seahive Croque Madame
Ingredients
- 2 cups shredded Seahive reserve 1/4 cup
- Deli sliced ham
- Dijon Mustard
- Sliced Brioche bread
- Butter
- Bechamel Sauce (recipe follows)
- Fried Egg over easy
Bechamel Sauce Recipe
- 4 Tbs butter
- 3 Tbs flour
- 1 tsp chopped garlic
- 2 Tbs dry white wine
- 1 Tbs Dijon mustard
- 2 tsp chopped fresh thyme
- 2 cups heavy cream
- Salt
- Pepper
Recipe
- In a saucepan over medium heat add butter until melted. Then add flour until we’ll combine. Cook 1-2 minutes to eliminate raw flour flavor.
- Add garlic, wine, mustard, and thyme.
- Stir together and add heavy cream, salt and pepper. Stir until it is thickened but still pourable. Remove from heat and set aside.
To make sandwich
- Heat saute pan over medium heat. Spread butter on 2 slices of bread and turn over.
- Spread mustard on one slice, then add ham and shredded Seahive. Add non buttered slice of bread on top and grill in pan until we’ll browned on both sides.
- Pour bechamel on top and sprinkle with remaining cheese. Place under broiler until browned on top. Remove from oven and place egg on top. Cut into this delicious creamy gooey goodness and enjoy.
