Mix well all the ingredients for the glaze in a bowl and set aside.
Preheat oven to 400. In a bowl mix Brussel sprouts, oil and sprinkle with salt and pepper. Pour Brussel sprouts on a baking sheet and roast in 400 degree oven 25-30 min or until tender and crispy brown. Place hot Brussel sprouts in an oven proof dish. Mix in walnuts, cranberries, bacon and top with glaze. Mix until well incorporated and sprinkle on shredded Promontory. Place back in oven until cheese is melted and bubbly. Serve straight out of the oven.
