Juicy stuffed mushroom burger topped with Cheddar and red onions

Ingredients

  • 2 lbs ground beef 
  • 1-2 tbsp your favorite steak seasoning (or use our recipe below)
  • 1 can of beer
  • 2 tbsp olive oil
  • 1 lb sliced white or baby bell mushrooms 
  • 1 tsp pepper 
  • 1 tsp salt 
  • 1 tbsp dried thyme 
  • 2 tbsp Worcestershire sauce 
  • 2 tbsp red wine 
  • 1 tbsp fresh chopped garlic
  • 2 1/2 cups Shredded Queen Bee Porcini 
  • Balsamic red wine marinated red onions (recipe follows)
  • Roasted garlic and thyme aioli (recipe follows)
  • Sliced tomato
  • Lettuce
  • Brioche hamburger buns

Marinated Red Onions

  • 2 red onions sliced thin
  • 1/4 cup red wine
  • 1 lb sliced mushrooms
  • 1 tsp pepper
  • 1 tsp salt
  • 1 tbsp dried thyme
  • 1 tbsp Worcestershire sauce
  • 2 tbsp red wine
  • 1 tbsp fresh chopped garlic

Combine all ingredients in bowl and let marinate for at least an hour or overnight is even better.

Roasted Garlic and Thyme Aioli

  • 1 cup Mayo
  • 1 tbs Dijon mustard
  • 6 cloves chopped roasted garlic
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp chopped fresh thyme
  • 1 tsp white wine vinegar
  • 1 tsp honey

Mix all ingredients in a bowl until well combined.

Burger Recipe

  1. Over medium heat in a saute pan heat oil. Add mushrooms, salt, pepper, thyme, Worcestershire sauce, red wine, and garlic. Cook until mushrooms are tender and soft. Set aside.
  2. Heat oven or grill to 400. In a bowl, combine ground beef, steak seasoning and 1 cup of shredded Queen Bee Porcini. Form a medium thickness patty and press the beer can in the middle of patty to create an indentation in the patty.

  3. Work the patty up and around the beer can bottom until about 1 1/2 inches up from the bottom of the can. You're basically making a little "patty bowl". Make sure there is a good thickness on the bottom of the patty. Carefully remove patty from the can. You should have a good indent in the patty. Fill the patty indentation with cooked mushrooms and grill or bake in oven until burger registers an internal temp of 155 degrees F. Sprinkle patties with cheese and cook until melted.
  4. Now it's time to assemble the burgers! Toast your buns (if you'd like) and now pile on the red onions, aioli, tomato, lettuce. 

Suggested Steak Seasoning 

  • 1 tbsp paprika
  • 1 tsp onion powder
  • 1 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1 tsp salt
  • 1 tsp ground black pepper
