Wrap sushi mat in plastic wrap to prevent ingredients from sticking. Once lined, cover sushi mat in prosciutto followed by a thin layer of risotto. Next on one half place roasted red peppers, asparagus, basil & cheese. Starting at one end of the sushi mat begin to roll the sushi mat, stopping between each roll to squeeze tightly.
Before starting the next roll, pull the opposite end of the sushi mat to tighten - repeat until the sushi mat is entirely rolled up. Drizzle with balsamic reduction, cut and enjoy!
