Ingredients:
- 3-4 fresh corn on the cob cleaned 
 
- 1-2 cups assorted cherry tomatoes chopped 
 
- 1 chopped jalapeño pepper 
 
- 1/4 cup cup red onion 
 
- 2 avocado chopped 
 
- 2 Tbs chopped cilantro 
 
Lime Honey Vinaigrette (recipe follows) 
- 1/4 cup grape seed oil 
 
- 1/4 cup fresh lime juice 
 
- 1 tbs Dijon mustard 
 
- 1 1/2 Tbs honey 
 
- 1/4 tsp garlic powder 
 
- 1/4 tsp onion powder 
 
- 1/2 tsp salt 
 
- 1/2 tsp pepper
 
Combine all ingredients for dressing in a bowl until well combined and set aside. 
Recipe:
- On a grill or sauté pan place corn on the cob cook it on all side until it gets a little char to it. Take cobs of corn and slice with a knife lengthwise to remove corn kernels.
 
- Add to a mixing bowl and add, tomatoes, onion, avacado, cilantro and vinaigrette.
 
- Mix until well combined. Serve with your favorite quesadilla or tortilla chips!
