Quesadilla on a plate with a clear bowl of salsa on the side


  • 3-4 fresh corn on the cob cleaned 
  • 1-2 cups assorted cherry tomatoes chopped 
  • 1 chopped jalapeño pepper 
  • 1/4 cup cup red onion 
  • 2 avocado chopped 
  • 2 Tbs chopped cilantro 

Lime Honey Vinaigrette (recipe follows) 

  • 1/4 cup grape seed oil 
  • 1/4 cup fresh lime juice 
  • 1 tbs Dijon mustard 
  • 1 1/2 Tbs honey 
  • 1/4 tsp garlic powder 
  • 1/4 tsp onion powder 
  • 1/2 tsp salt 
  • 1/2 tsp pepper

Combine all ingredients for dressing in a bowl until well combined and set aside. 


  1. On a grill or sauté pan place corn on the cob cook it on all side until it gets a little char to it. Take cobs of corn and slice with a knife lengthwise to remove corn kernels.
  2. Add to a mixing bowl and add, tomatoes, onion, avacado, cilantro and vinaigrette.
  3. Mix until well combined. Serve with your favorite quesadilla or tortilla chips!
