I was hesitate at first to try this variety because the combination of salt and honey did not seem right. I was wrong! It has the same effect as salt and sugar in chocolate or ice cream or chocolate chip cookies.
bet you didnt know Utah made an excellent artisanal cheese. here it is. creamy, from jersey milk, slightly dry on outside due to salt rub, which really works, almost like a more creamy parmiggiano. not sweeter, but an ever so slight hint of a rounded sweetness due to honey, mostly accentuates the natural flavor, giving it an Umami push. def savory and cheddary, but with a distinctive texture and bite. this will surprise anyone in Utah that didnt know such a thing existed, and it has definitely cheered up this committed California Foodie.
