Ruthie’s Ricotta Peach “Sundae” 

Main

  • 1 8oz package of Ruthie’s Ricotta 
  • Peach compote (recipe follows)
  • Oat Cinnamon brown sugar crumble ( recipe follows) 

Combine and enjoy :)

Peach compote 

  • 3 cups peaches 
  • 1 cup brown sugar 
  • 4 tbsp grapefruit juice 
  • 1/2 tsp grapefruit zest 
  • 1/2 tsp chopped fresh mint. 

In a saucepan over low to medium heat add peaches and brown sugar. Cook until slightly thickened. Remove from heat and stir in other ingredients. Cool before serving 


Oat Cinnamon Brown Sugar crumble 

  • 2 cups raw oats
  • 1 stick of butter melted
  • 1/4 cup brown sugar 
  • 2 tbsp maple syrup 
  • 1/2 tsp cinnamon 

Preheat oven to 375. Stir all ingredients together and spread on greased sheet pan. Bake until crumble is light golden brown. Let cool.
