Raspberry Ricotta White Chocolate Ice Cream

Ice Cream

  • 2 cups heavy cream
  • 1 cup whole milk
  • 2/3 cup sugar
  • Dash of salt 
  • 1 tbsp vanilla extract 
  • 1/3 cup of Ruthie's Ricotta mixed well with 1 Tbs of heavy Cream 
  • 2 oz good quality white chocolate 
  • Fresh raspberry sauce (recipe follows) 

I’m a large mixing bowl combine heavy cream, milk, sugar, salt, and vanilla extract. Pour into ice cream maker according to manufacturers directions. When ice cream is thick and mostly frozen add ricotta mix, white chocolate, and raspberry sauce. Mix until barely combined. Freeze ice cream until ready to serve. 

 

Raspberry Sauce

  • 2 small pints fresh raspberries
  • 1/2 cup sugar 
  • 1 tsp Lemon zest
  • 1 tbsp lemon juice

In a sauce pan over medium heat place all ingredients in pan and cook until raspberries are soft and have released juice. Cool before using.
