Ingredients: 2 packages of Squeaky Bee Curds 1lb cooked farfalle pasta 2 cups chopped heirloom cherry tomatoes or any cherry tomatoes will do 2 cups baby arugula 2 thinly sliced shallots 1/4 cup chopped fresh basil (reserve 1 tbs) Balsamic Vinaigrette (recipe follows) Recipe: In a large bowl add, pasta, curds, tomatoes, arugula, shallots and basil. Pour dressing over ingredients and toss until well combined. Can be made ahead. To serve top with 1 tbs fresh basil and drizzle with balsamic glaze. Balsamic Vinaigrette: Ingredients: 1 cup of grape-seed oil or olive oil 1/2 cup balsamic vinegar 2 tbs dijon mustard 1/4 cup honey Juice of half lemon 1 tsp garlic powder 1 tsp onion powder 1 1/2 tsp of salt 1 1/2 tsp pepper Recipe: In a blender combine all ingredients until well emulsified.
